Description

These Brown Butter Oatmeal Chocolate Chip Cookie Bars are rich, chewy, and packed with nutty brown butter flavor, hearty oats, and melty chocolate chips. The perfect easy dessert for any occasion!

Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, browned
  • ¾ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional, for extra warmth)
  • 1 cup old-fashioned oats
  • ¾ cup chocolate chips (semi-sweet or dark)

Instructions

1️⃣ Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.

2️⃣ Brown the butter: In a saucepan over medium heat, melt the butter, swirling occasionally. Continue cooking until it turns golden brown and smells nutty. Remove from heat and let cool slightly.

3️⃣ Mix wet ingredients: In a large bowl, whisk the browned butter, brown sugar, and granulated sugar until combined. Add the egg and vanilla extract, mixing until smooth.

4️⃣ Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using). Gradually add to the wet ingredients, stirring until just combined.

5️⃣ Fold in oats and chocolate chips. Do not overmix.

6️⃣ Transfer dough to the prepared pan and spread evenly.

7️⃣ Bake for 22-25 minutes or until the edges are golden brown and the center is set.

8️⃣ Cool completely in the pan before slicing into bars.

  • Storage: Store in an airtight container at room temperature for up to 4 days.
