Ingredients
- 3 large eggs
- ½ cup carnitas (leftover works perfectly)
- 1/3 cup fajita-style veggies (bell peppers, onions)
- 1 tsp butter or oil
- Salt and pepper, to taste

Instructions
1. Whisk the eggs in a bowl until smooth. Season with salt and pepper.
2. Heat a 10-inch non-stick pan over medium heat. Add butter or oil.
3. Pour in the eggs and cook for 1-2 minutes until just set.
4. Add the carnitas and veggies to one side of the eggs. Fold the omelet over.
5. Cover and cook for another minute until heated through.
