Ingredients

- 1 tsp cinnamon
Wet Ingredients:
- ¾ cup Greek yogurt
- ½ cup honey
- 2 large eggs
- 1 tsp vanilla extract
Cinnamon Crunch Swirl & Topping:
- ½ cup brown sugar
- ¼ cup flour
- 1 ½ tsp cinnamon
- ½ tsp espresso powder (optional, enhances flavor)
- 4 tbsp cold butter (cubed)

Preheat & Prep:
Preheat oven to 375°F (190°C) and grease a 9×5-inch loaf pan. -
Mix Wet Ingredients:
In a bowl, whisk together Greek yogurt, honey, eggs, and vanilla extract. -
Combine Dry Ingredients:
In another bowl, mix flour, baking powder, salt, and cinnamon. Gradually add to the wet ingredients, stirring gently. -
Prepare Cinnamon Crunch:
In a separate bowl, combine brown sugar, flour, cinnamon, and espresso powder. Cut in cold butter until the mixture forms coarse crumbs. -
Assemble the Cake:
- Pour half of the batter into the loaf pan.
- Sprinkle half of the cinnamon crunch topping.
- Add the remaining batter, then top with the rest of the cinnamon crunch.

Bake & Cool:
Bake for 55-60 minutes or until a toothpick comes out clean.
Let cool for 30 minutes before slicing.
