Ingredients
- 500g all-purpose flour
- 250ml warm milk
- 250g cold butter
- 7g active dry yeast
- 50g sugar

Instructions
1️⃣ Activate the Yeast: In a small bowl, mix warm milk, sugar, and yeast. Let it sit for 5–10 minutes until frothy.
2️⃣ Prepare the Dough: In a large bowl, combine flour, salt, and the activated yeast mixture. Knead until smooth, then let it rest for 30 minutes.
3️⃣ Add the Butter: Roll out the dough into a rectangle and place cold butter slices in the center. Fold the dough over the butter like an envelope. Chill for 20 minutes.
4️⃣ Laminate the Dough: Roll and fold the dough three times, chilling between folds. This creates the iconic flaky layers.
5️⃣ Shape the Gipfeli: Cut the dough into triangles, roll them up tightly from base to tip, and curve them into crescents.
6️⃣ Let It Rise: Cover the shaped Gipfeli and let them proof for 1–2 hours until puffy.
7️⃣ Bake to Golden Perfection: Brush with egg wash and bake at 200°C (400°F) for 15–20 minutes until golden brown.
